Soluble, Viscous, Fermentable fiber is often recommended to those with high blood cholesterol for several reasons.

1. The liver makes cholesterol from bile salts. Bile Salts are like the detergent of the intestine- Soluble fiber grabs onto Bile Salts in the liver and blocks reabsorption of Bile Salts, helping to extract them to the colon. The extraction of bile salts signals the liver to extract more cholesterol from the blood ( LDL cholesterol) to make more bile salts ( because of the enterhepatic [enter= inside, hepatic= liver ] concentration imbalance). The extraction of cholesterol from the blood = lower blood cholesterol.

2 High blood glucose leads to a high insulin response. Insulin triggers acitivty of HMG CoA reductase, an enzyme which we require to make cholesterol from scratch. If we can lower blood glucose, lower the insulin response, inhibiting HMG CoA (and inhibiting fat synthesis)… we inhibit making cholesterol.

3. (Highly Fermentable ) Fiber produces SCFA (short chain fatty acids) when bacterial fermentation occurs. SCFA go to the liver and inhibit HMG CoA reductase …. inhibits cholesterol production
***SCFA ( acetate: absorbed and used as energy for colonic cells, proprionate absorbed by liver and inhibits HMG CoA, Butyrate inhibits colon cell proliferation (growth)… all these SCFA help reduce blood cholesterol ) ****

4. (Viscous) Fiber delays CHO (carbohydrate) absorption as do Lipids and Proteins, this delay results in lower insulin response, and as I said in #2 … lower insulin response–> lower B. cholesterol.

Examples of these include guar gum, pectin, oat bran, bean and bean products and psyllium ( weird one b/c is insol. more than sol.) oranges, brussel sprouts..

5. Bile salt concentration also shifts on its own. 2 bile salts: cholic acid and chenodeoxycholic acid, can both  inhibit HMG Co A ( inhibiting cholesterol synthesis)

 

* Drugs like Zetia and Zocor inhibit HMG CoA—- which inhibits cholesterol production
via inhibiting HMG CoA… this has a double benefit because when cholesterol is not produced from scratch, the extraction of cholesterol in the blood (to balance the bile salt concentration ) is likely to occur more frequently- which is also reducing the blood cholesterol.

As I mentioned on earlier posts on fiber… viscous (referring to the thickening gel consistency) has its fullness effect in your stomach ( the upper GI) … hence that “fullness” feeling everyone talks about related to fiber. Fermentability refers to its capacity to be broken down by bacteria, when its broken down – short chain fatty acids are produce- which also does NOT contribute to “fecal bulk” . Fecal bulk contributes to dilution of the lower GI… and now we are at…

Constipation!!

Insoluble, Nonfermentable, Nonviscous Fiber is better at treating/preventing constipation.

Insoluble fiber contributes to fecal bulk since it is NOT fermented (broken down)… Fecal bulk ( along with water) helps dilute the bulk = relieving constipation

So wheat bran, cellulose, lignin are all better sources for constipation reilief
(lentils, carrots..)

Colon Cancer and Fiber

Fermentation increases the production of SCFA, but does not contribute to fecal bulk. Fecal bulk helps dilute the GI tract. Dilution of the GI including diluting compounds such as bile acids, diglycerides, ammonia…. These compounds STIMULATE cell division in the colon- which is BAD news since dividing cells makes cells more susceptible to carcinogens.
Poorly fermentable fiber helps dilute the GI- helping to protect against cancer

I teared up at this card that Jeff got me! He doesn’t “do cards”. I don’t either, nor do I ever cry at them! It was incredibly thoughtful and what he wrote

So we began with a bottle of a cabernet/merlot blend. and salads as appetizers. I enjoyed this salad although I pushed the fried onions to the ends, and ate from the middle out. I have to say I do not enjoy salads that are all chopped up and mixed together because I can’t tell what I am eating! The company matters just as much as the food. A bad bottle of wine is rated higher in good company, than a good bottle of wine in bad. We realized Jeff had met our server before through a friend. He kept bringing us “tastes” of these incredibly expensive wines! ( I am talking $520/bottle)That explains the four glasses in front of my place setting and the Cheers!

Every bite of this filet mignon melted in my mouth as if it were butter. It was absolutely fantastic. Pure enjoyment for any meat lovers out there, and worth the $. The server didn’t tell me they prepare Banana’s Foster AT the table ( it is not even on the menu)! I had to get a shot of this!

Body: I attempted to run after class, however, shooting pains in my knee made me stop- I walked because it was SO gorgeous outside ! ( 4.5 mile walk)
Mind: Reflection Paper for Babettes Feast, and updated literature review for college female food choices

Soul: It’s My BIRTHDAY! Jeff and I cleaned out the living room, took the old couch to Goodwill and picked out paint samples for the rooms! Hooray! We agreed on every room! That was too easy! Dinner was a total soul experience too- and our new couch is now in place!

Breakfast: Birthday Cereal- the banana pieces had peanut butter candles. I poured half a cup of milk on top after I took this because I was worried it would make everthing float around… it didn’t!

Lunch: (leftovers) Grilled Chicken and Rice, sorry not pictured
Body: Run! I intended to go for a long run after furniture shopping to probably burn off more stress, I decided to run for at least 40 minutes. ( Same as Caitlin!) I ran with Jack around our neighborhood for 40 minutes and I count rummaging around furniture stores all afternoon as exercise too!
Mind: Finished the last 100 pages of Gastronomical Me! Now I have to reflect on it, write a 3 page paper, and write the rational for a lit review. My classwork now seems much more manageable now that reading the book is done!
Soul: Finished Gastronomical Me! Finally have a new, leather sofa to cuddle on and come home to! Aahhhh!!
It feels so awesome, regardless of how much money I just spent, I am so happy with it! And…Jeff loves it too.. We totally werent going to go in to this place, and all of a sudden it was there and we both sat down, looked at each other, and knew it was “The One” ..
There it is! Now we are going to find some accent pieces, get rid of our old sofa, and paint!

Breakfast: Smoothie some in a glass and some over Kashi Crunch, with a banana and too much pb! I actually didn’t eat all the peanut butter! It was about a tablespoon but I just couldnt seem to eat it all ( I ran out of banana!)

Lunch: A packet of light tuna in water, with a tsp of fat free mayo, a tsp of mustard and some fake cheese mixed in the bowl. Whole wheat bread to eat it on and some steamed veggies!

Dinner: Grilled Chicken with Taco Seasoning, Rice, and some (real) cheese! Steamed veggies on the side! I had half a whole wheat wrap ( the last one oh no!) and half of a serving of rice to “balance” my grains/carbs.

Dinner: Ribeye steaks were on sale at Harris Teeter BOGO! I never buy red meat because 1. its so expensive! and 2. its higher in sat. fat.. and 3. I never know what constitutes “good meat”…

However, I do enjoy it! I use to not get enough iron, and drinking coffee can inhibit iron absorbtion so thats like a double whammy ( i can’t believe I just used that phrase but it seemed to fit).
5 oz Steak ( just pepper and grilled- I started the grill and everything too!!!), Asparagus with lemon pepper seasoning, Kashi Rice Pilaf (its not the fiesta kind, its just the New “Instant” 7 Grain Pilaf )

Snack
I had some serious research to do for classes so I came back to campus after lunch/shower and had to dash back… I packed this tlc honey almond flax bar and ate in the library!

Lunch
Turkey sandwhich on 7 grain Light, with mustard ( in memoriam of my first food experience see post) – haha! Plus lots of fresh cut veggies… I only ate a bit of the chobani because I was full from everything else.

I ate on a paper towel because our sink is clogged and I don’t want to pile in more dishes…ick!
This bread ( It took me forever to pick out a loaf at the store. People came and went and looked oddly at me looking at the ingredients! It took so long because I hate bread that is high in calories {because you add all this stuff to them, which makes it too big or filling to eat, etc} i hate bread that has High Fructose Corn Syrup, i hate bread that has no fiber… I don’t really enjoy bread for the most part at all really. I do, however, enjoy this bread very much for its taste, cost, and calorie size… despite that the 8th or 9th (?or so) ingredient on the list is fructose, and corn syrup….

Before lunch I had a GLORIOUS Run of 4.5 miles! I tell you, I had a case of the blah’s after breakfast and there is nothing like a good run to fix em!
I did campus loops + … each loop on the road is 1.25 but I try to run extra on the ground if I can to avoid traffic and get better cushioning from grass/dirt. My first loop was 13 minutes, 2nd was 11 minutes, 3rd was ~ 2 miles~ in 16 minutes… Lots of stretching after!

There is only half of the cookies, they went on for another two tables to the left! On the far right, there is a fake cake- its a card holder!!!! How adorable! Their cake was five levels (tiers?) and ivory with a black fondant stripe on each layer! Christanthamums as decorations!

Jeff’s Aunt Linda, the brides mother, made ALL of these cookies AND that Card Holder! She told me how she was worried it wasnt big enough ( it wasn’t!) but they just took out some and put em inside one of the gift bags.

and so it ends… at the airport at 9 am, I had a egg and ham sandwich, and half a diet coke. I swear my hormones were at the airport on friday and took off on another plane because I couldnt stop sweating, then chills , then hot again all weekend.. I wanted coffee but then started sweating and needed something cold! Anyhow, we got stuck with not just this tin of cookies, but another tin for Jeff’s sister and Grandma that couldn’t make it! I only stole one!

I picked up Jeff from work Sunday evening and we went out to dinner- I wanted to try this place a girl in my nutrient metabolism class recommended. It did not dissapoint! They had so many options with great veggies, but I decided on …. (Veggie Girl don’t look!!!) an angus beef and brie sammie with a salad side (not happy they charged me $2 extra for the salad.. I thought they would bring me a salad not dabble some on the plate… oh well though) . The sandwich was not what I thought it would be, but it was very tasty! The service was odd… granted we were in tshirts and hats but no one else was “fancied up” and their dinner menu is nearly ALL sandwiches! I would still go back because I liked the menu options and it was a cute place!

So you can easily modify this – esp. for Vegans out there- Soy Crumbles- Boca Crumbles vs. my Ground Turkey or you Meat Lovers out there – Ground Beef vs Ground Turkey. I used a new Kashi product
that cooks in the microwave in 90 seconds! Fiesta Pilaf ( it has roasted corn, black beans, borwn rice, wheatberries, …) but you could use white/brown rice if you prefer. I also used a chobani plain greek yogurt instead of sour cream…

Ingredients for Two ( or Four):
Kashi Fiesta Pilaf
1 lb ground turkey seasoned with: cumin, mrs. dash spicy
shredded cheese 1/4 cup, times 2
roasted chipotle salsa
whole wheat tortillas (2)

Recipe: Brown ground meat with seasonings to taste on low until pink is gone. While it is browning you can cook rice pilaf as directed, put in bottom of casserole dish. I then layered on a container of chobani greek plain, then spread on a thin sprinkle of the cheese. Then add cooked meat ( or soy crumbles) in casserole. Sprinkle on remainder of 1/4 cup cheese, spread on salsa. Sprinkle on additional 1/4 cup of cheese to get all brown and crusty… ( at this point I threw it in the fridge and headed to class but you could bake immediately) Bake in 325 oven for 25 minutes ( or until cheese is melted, brown {how I prefer} ) Plate with tortilla or use tortilla as base layer ( if you prefer your tortillas softer and mushier put on bottom… i liek my crispy so i waited till then end and toasted em for a few minutes as the oven cooled Save Energy! )

Nutrition: The entire casserole:
1400 calories
98 g Protein
20 g Fat (* I used 93% lean turkey because it was $2.99 vs 99% lean $5.99 and only 30 calories difference, all in 3 g extra fat, and a serving of this is only 5 g fat total )
172 g Carb. 36 g Fiber

1/4 serving below ( i had extra cheese but not all the burnt tortilla so the counts here are for the recipe as is)
350 kcals
25 g Protein
5 g Fat
9 g Fiber
43g Carbos

my run was fantastic! 3 .5 loops around campus ( which i tracked down to 1.25+ miles each loop.. ) in 33 minutes! It was just before a spout of rain so I got great breezes and running with no pain now for a week has been well GLORIOUS!

Lunch: no pic b/c it was leftovers from last night.. whole wheat pasta, grilled chicken in tomato sauce with extra added veggies.. and a few ( 4-5 ) dark chocolate chips.

Still havent finished paper but have made progress and I made dinner too…. Laural’s Mexican Pie

Gastronomy Class was also GLORIOUS!
We blind taste tested DARK CHOCOLATE!! and colas ( ick! ) …

I loved the dark bitter chocolates but couldnt stand any of the sodas..

How funny- my lifting splits are BBQ.. Back, Bicepts, Quads and abs

I thought it was hilarious , anyhow- I am BBQ lifting at home, heading to school for my loan refund check (hooray for money! even if its borrowed technically)… then study adv. nutrient metabolism, then cardio/run!

My first response paper for Minority Health is done! My goal was to finish it by 11 am and I did!

Breakfast was half a protein Smoothie and a Banana with PB! (8:00 am)

Last night I had pasta and chicken sausage with a salad! I took a pic but i need to upload so i will edit it soon

Yesterday i went to the gym and did 35 minutes on the elliptical/arc trainer combo…. I was rushed for time b/c I had to read for class and pick up my car. Turns out my tires were rotated on friday ( for te 55k mile service- i HATE going to the Toyota dealership).. which caused the alignment to be off because one of my tires pulls to the right b/c of pressure/damage from speed bumps/curb hitting ( Which i swear I try so hard not to do!)

Anyway, it cost (Jeff- cuz he paid) $70! They told me they cant really fix the pulling because of the damage to the wheel … Even though once again- I didn’t hit anything! I did bump a curb three years ago but I find it odd that all of a sudden three years later it is pulling to the right after service ( it wasn’t on the way there!)

11:00 AM ( starting to feel a tiny hunger, thought i would note the times) …

I am heading to the gym for hopefully a good lifting session and run, then back to home for shower and lunch, then out to campus to print my paper, research for research methods class and meet with my group before class.

*Gym : Lifted CSTH…chest, shoulders, triceps and hammies! Ran 2.5 miles no pain!! Arc Trainer with alternating resistances 25-45 for 15 minutes~

**Lunch: Grilled chicken strips with broccoli (South Beach Living, Chicken Caprese.. I looked at the ingredient list and all where understandable real ingredients except modified food starch… which I am okay with since I usually stay away from it!)… salad was romaine american salad with gorgonzola crumbles, kashi crackers ( i think like 10-15).

I have NO idea what to do for dinner but I think tonight I will hang the bamboo blinds that do fit…and read biohemistry for adv. nutrient met. tomorrow! and do some “Laural’s Closet Sale”
