Vitalicious.. Vitalicious…

( adapted from the Fergie song, Fergilicious, for those of you who didn’t catch on!)

Vitalicious was so amazing to send out a sample of their vitatops and vitabrownies! I have seen these for quite some time and wanted to try them.  However, I wasn’t ever really sure what to expect.  I have heard they were “good” or even “great” but I didn’t understand what that really meant!

I am also really interested in this product because I have been taking a Vitamins, Minerals and Nutraceuticals Class all semester and really have been awakened to the importance of every vitamin. The antioxidant capabilities of Vitamin E, Vitamin C are crucial. The B-vitamins are essential for metabolic functions among other benefits. Functional foods are evidently becoming a part of our American diets and I don’t necessarily think that is a bad thing. I feel that it is the dietetic field adapting to what ”typical American” diets have become, evolving what we want into what we need. These fast, easy, portion controlled, vitamin packed muffins are quite an example of this.

Two of almost every flavor Vitatops and a vitabrownie box!! I was really excited but I promptly but them all into the freezer per instructions, as they remain in the freezer until you are ready to use them. You can thaw or pop em in the microwave for warmth. I took the time to read over what Vitalicious was all about and checked out their website. Here is some information …

To thaw, I put it in the microwave for 20 seconds, and then another 10 after checking on it. It was not overly sweet nor was it too rich in chocolatey goodness. The texture was very much like a little cupcake disguised as a vitamin packed muffin! It had a wonderful cocoa aroma and warm gooey white chocolate chips. I think this is a fantastic dessert option  because you get vitamins, fiber, protein AND chocolate in a pre-portioned size, which is great for weight management and just being able to sneak in something sweet without going overboard all the time. Have your vitatops and eat them too!

Body:
Rest from running but I may do a yoga session later. I feel better but still a little woozy. Although I am hungry, it is really hard to eat- I think that burger from the new Brewpub might have gave me a bug. Ick. Glad I got in my 8.5 milerun yesterday before the symptoms hit!

Mind:
Studied for exam tomorrow ( I did manage to study quite a bit!)

I was contacted by our Nutrition Admissions Coordinator, Nealie, regarding her posting up a link for Body Mind Soul on the graduate web page! How awesome, I love sharing my foodie life with everyone! I look forward to hearing from prospective students and getting some link love through our school’s site!

Late Breakfast:
Banana, Chobani Nonfat Greek Strawberry Yogurt, Half of a Jeff-sammy ( I made an egg white with a little yolk, slice of ham, and put that on whole wheat)

I decided I really wanted pasta salad so I just threw this recipe together:

1 box whole wheat rotini, cooked to al dente
4-5 slices of pepperoni, sliced into 4ths, then again in 1/2.
The last of our Cabot Cheddar ( about 3 oz) sliced into small rectangles
2 packages of thawed, frozen Edamame ( this makes a great veggie/protein addition to pasta salads!)
1.5 cups frozen, thawed spinach
1 tablespoon feta
2 tablespoons NOO Balsamic Vinegar
2-3 tablespoons Northern Italian Lite Dressing

It is so easy because you just boil the pasta, then throw all the ingredients in and toss!

I cooked chicken breasts (perdue, boneless, skinless, hormone free) in the pan with lemon pepper seasoning.

Good morning all!

First, I think it may be allergies but I feel awful! I woke up when Jeff left at 7:30 ( already sleeping in) tried to have breakfast and just didn’t have an appetite, fell back asleep until 10:15 am!!!

Ugh, I am typically the type that says ” I probably needed it” but right now I feel even worse and just feel woozy like I should go back to sleep. Unfortunately, I need to get up and study, meet with my partner for metabolism, prep for the IFFS meeting and go to that meeting. I can’t stomach coffee right now, so I think I will grab some tea on campus.

Oh and I am also gathering a weekly post that I will start doing, A Week in Desserts! I have saved the photos of my desserts this week to put into one weekly post. I am a dessert fanatic but usually end up having it after I have already downloaded photos. My running has been creating a hunger monster so I will be getting that together this evening or tomorrow! I want to show everyone that I do eat dessert and sometimes its healthy sometimes its less healthier but either way delicious and a part of my diet!

There have been tornado watches and warnings all morning! I think we are in the clear but its moving through where Jeff’s Nana’s house is. so scary! Hope everyone is safe and sound!

Body:
That is also what I kept thinking today during my 8.50 mile run! I 8.50 miles ! I couldn’t have wished for a better run and to think I was moaning and groaning before it! I felt fantastic even during each set of hills! I think it was my updated playlist and gorgeous weather and the warm up I did for my knees!

Total running time fo the 8.5 miles was 1 hour and 4 minutes!  ( 4:36pm and got back to my car at 5:40 pm ). It feels too good to be true !? I am pumped up!

Tomorrow should be my 30th day of the shred but I never figured out if it was 30 days straight or if you took rest days- Do you count them as part of it or only the days you do the shred? Anyone know?

Right after my run and Jeff’s bike ride, we rushed over to his parents for dinner. Hi Momma Mo! She had me try these granola bites- I had about 6 because they were so delicious!

Fish Fry!
Jeff had caught a bunch of Walleye on a trip to Ohio for business- and his parent’s caught “blue” fish on their recent fishing adventure so they did a fish fry. Tartar Sauce, Fish, lemon wedge, baked fries, fruit salad!
