Thoughtful Thursday Eats

Breakfast:
Fruit Covered Oats

Pineapple, Cantaloupe, Raspberries, a few slices of banana and a little peanut butter with a Green Smoothie on the side…

I know I know, it looks gross. I used Kale, frozen pineapple, frozen blueberries, milk and chocolate protein powder to make a mini smoothie. It was so refreshing!

Lunch:

Oikos Organic Bluberry Yogurt sprinkled with Smart Start cereal, kiwi,(the other half of ) a banana, peanut butter on my spoon in the back

and I just used frozen mixed vegetables and steamed them in the microwave for several minutes.

Dinner:
Fish Taco and Salsa with Greens

The fish:
Wild Tilapia made in the skillet with lemon pepper seasoning and capers
The Greens: 
Kale and Spinach heated in the Micro
The Salsa:
I sliced up fresh cantaloupe, added bottled black bean and corn salsa, frozen thawed pineapple, and extra black beans with some hot sauce. It was really tasty! I know mango salsa goes well with fish so I figured the cantaloupe would be a good substitute!

  5. Hehehe, I saw this Luna bar as we were checking out and I turned the Rolos over and over in my hand and asked my husband – Do you think I should get the Luna bar instead? He said no, but then when we got outside and I popped one in my mouth he said – You so should have gotten the Luna bar – totally kidding of course. He did get smacked on the shoulder for that though! :)

    The rehersal dinner was at a chinese restaurant that my husband’s family has been frequenting to since my husband was like 4. They were so happy to share in our big day. So, no not too expensive. Honestly, if you do a restaurant it Saturday shouldn’t matter.

    We didn’t have anyone not come because it was on a Sunday. My grandparents did bail because it was right after 9-11 and they didn’t want to fly, but other than that no one complained. We had a brunch on Monday morning and then jetted off to Amsterdam. Too much fun!
