Sunday Pot Roast

Slow cookers are such a wonderful creation. It is great to be able to leave all sorts of healthy ingredients to cook slowly all day while I’m busy with work, knowing that the end result will be ready to eat for me when I get home! I put some stew meat and lean sirloin strips into the crock pot with parsnips, carrots, celery, green onions, sweet potato, garlic, thyme, and fresh parsley. Hoping in 6 hours to have a yummy Sunday pot roast!

Body:

This week was quite balanced with running every other day.  I ran 4 miles tuesday, 5 miles thursday and 3 miles Saturday. In between those running days was 3 days of strength training because as you may or may not know,  resistance training builds muscle and lean muscle mass burns fat! Because of my work and school schedule, I missed out on yoga class but did do yoga on my own most mornings to help wake me up!

Mind:

Grade 5 Lesson 1 : Examing Food
I am excited for Grade 5 because they start to learn more reasons why we eat in addition to eating a variety of colorful foods from different food groups, the curriculum starts to ask why we eat for social reasons, convience etc. 

I found a possible research topic for our 10 page paper due in Medical Nutrition Therapy! I am intrested in Necrotizing Enterocolitis because it is a huge concern for premature babies and would be great to learn more about enterocolitis, which would be a common problem I may run in the future.  If NEC does not work, I might look into Maple Syrup Urine Disease- it is pretty fascinating and is named so because the branced chain amino acids are not metabolized properly, resulting in urine that smells like maple syrup! ( Is it weird that I am saying “Ew… and Cool!!” at the same time?) 

Soul:

Social ties are so important. We need to feel like we belong, that we give and get support. There are all kinds of friends that I am so appreciative of having for many different reasons. I have close friends that I can share intimate details with and casual friends that might just be a friendly smile that brightens my day. I have work friends and online friends that I have never met in person, friends from childhood that I rarely ever see anymore. I appreciate these people for who they are, and for the warmth and color they bring to my life.
