Meals for Deals on Wheels.. okay not really on wheels…

Breakfast

Steel Cut Thick Oats ( I got a huge bag of gluten free oats from Bob’s Red Mill on sale for like $4.. it will probably last me through spring ! ) and an Organic Fuji

( just fyi, there is a big glob of peanut butter underneath those oats!)

Lunch
I found these frozen soups at Whole Foods on “sale” 2/$6 and I was really intrigued to try them for some reason.  They were gluten free, high in protein, seemed worth it considering I was really in the mood for Chicken Noodle as I am feeling under the weather a bit.

Verdict: It was really good!

The noodles were definitely gluten free and rice-based but the broth was tasty, the chicken was meaty and lean. Not too shabby!

I scrambled some tofu and had mixed veggies. I thought I would try out this Mori Nu brand, which I have never had before but it was on sale as well ( hence the whole meals for “deals” ). I MUCH prefer every other brand of tofu I have tried. Ick! I hate to say but must admit, I covered it with cheese to make it taste better!!! I ate it because I knew nutritionally it was fine plus I was too tired to cook anything again but never will I buy Mori Nu.

I also had a cherry pie larabar after the soup at lunch and a fruit leather between afternoon classes today to give me a little boost for the gym- the boost didn’t work so I sat in the steam room. Luckily, the steam room was exactly what I needed. Now, a bubble bath is calling my name!

  1. Ugh I hate it when I prepare a meal and then it’s just yucky! I try to fix it in many ways too, but sometimes we just have to give up, haha. Your oats look green, for some reason ;-) I love it when i find new convenience foods that are healthy and yummy at the same time. A while ago I also made the Chickpea soup for the soul from Veganomicon (you can also find the recipe on http://www.theppk.com), also a very tasty & healthy & comforting soup for when you’re a feeling a little under the weather.

    mori nori is ONLY good for desserts like blending it and such.

    stick to extra firm and firm tofu for scrambles :)

    loved the idea of a “surprise” of peanut butter under the oats:) and looks like good advise about the mori nori…Now, hope you feel better tommorrow!
