Okay, for one, it was delicious because the sweetness of the potato with the jelly was a perfect contrast for the nut butter! It is also nutritionally sound since you are getting in healthy fat with a great source of fat-soluble Vitamin A ( you are really consuming Carotene, which your body converts to Vitamin A easily with the fat source). Sweet potato also provides an excellent source of potassium and the nut butter provides magnesium, and both provide filling fiber! The only thing that it lacked was some protein so I rounded out my breakfast with Chobani and some warm pineapple (frozen then heated). I also loved it because it required no bread. As I have said multiple times before, I never ate much bread or wheat products as they made my stomach upset quite often. Finally pinpointing this to a gluten intolerance has led me to experiment with crazy substitutions like this! If you try it out, link back to me because this was my best idea yet!
Lentil Soup with extra spinach, brussels, and a grilled chicken breast. Fiber, veggies, protein, what more could you ask for?
I made this sauce using a can of stewed tomatoes, a can of diced tomatoes with basil, garlic and oregano, and the last half of vodka sauce (Bertoli). It was all delicious with some gluten free noodles, chicken, and organic baby greens.
Again, balanced everything out with veggies, some whole grain rice pasta, and lean protein.
Body:
Since we were snowed in this weekend and I was sick and the whole car accident, I wasn’t up for much until yesterday. I went to the apartment gym because my gym was closed for business anyhow- I sandwiched cardio and resistance training again. Elliptical, followed by quad extensions, squats with bicep curls, bar curls, lateral pulldown, and abs, followed by Elliptical.
Yoga too! I tried to repeat a practice similar to Claudia’s class at the gym and found myself getting a great stretch.
Mind:
School cancelled classes today ( thank goodness!) due to the ice/weather. That means my Medical Nutrition Therapy exam is pushed back at least until Wednesday, giving me more time to learn about anemia. I had already gotten through liver and kidney notes, biochemical testing, and the first half of anemias!
Work-In the middle of Grade 5 for Cooperative Extension! They are learning even more about vegetables and fruits, such as they offer specific vitamins like carrots and squash offering Vitamin A & C, which help with our growth, vision, skin and health. Maybe that’s what shaped my experiment with the pb&j sweet potato!
Work-I got PROMOTED! This weekend at work I chatted with my boss and he was excited to offer me the opportunity of GSA. I am scheduled to be certified as a Guest Service Associate this week! That means I will earn twice as much per hour and I am thrilled! I think my favorite part of being a hostess is chatting with the customers about how they enjoy their dining experience, that is mostly what the GSA is responsible for so that is exciting! I think it is from learning more about Gastronomy.
Soul:
I really want a puppy! I have heard that many people can all of a sudden, sense their biological clock ticking, “baby fever” if you will. It can be contagious in a sense, when you see an amazing little miracle that is just opening its eyes to a world around them-I mean who wouldn’t want that!?
Well, I would love to start with a puppy first before anything else! After having the chance to puppy sit for Bailey Charles, I was amazed at how I just wanted to watch his next move! Bailey stared into the fireplace at his reflection thinking it was another puppy and then got tired quickly climbing into my lap.

That puppy is adorable… what bread is he and will he stay that size forever??
He is a German Shepherd mix– I wish he would stay that size but no, I think he will get bigger. My friend was told by the original owners that it won’t get that big .
Laur- He has “parvo” – I don’t know what that means, but apparently, it can be super common in puppies and really contagious and detrimental ( they loose all their nutrients b/c of pooping and vomit b/c of the parvo that they get super tired and won’t replenish by eating/ drinking so then they won’t have enough energy to fight the infection, etc.)…
