Packed with Vitamins
I was so excited this fresh fruit was on sale, although it isn’t in season (seasonal) or organic (free of pesticides) nor local (grown in this region), I still love fresh fruit and happy that technology allows us to have so many things available in stores all the time!

Anyhow, I had some scrambled egg whites with salsa ( great sources for lycopene & protein), and a small section of some bread with almond butter too ( healthy fats and whole grains!).
This held me over all morning while I worked on school assignments and research.
Lunch was canned soup..
Again, not exactly “whole ” or the perfect picture of health. I have been so eager to try the Progresso “Chicken Tuscany” with white beans, tomatoes, carrots, celery and chicken. Legumes are a great sources of protein, but they also provide lots of fiber, antioxidants, and folic acid. So I was excited and pleasantly surprised with this! It was delightful I must say! I added fresh parsnips for some crunch and cheese for, well, cheesiness.
Dinner Last night ended up being noodles! I made a batch of hodgson’s mill gluten free angel hair pasta and paired it with a pre-cooked chicken breast.
Dinner this evening was leftovers, sort of.

The noodles were intended leftovers and I had stopped at the store for some pasta sauce since I was out & about today. I grabbed this guy:

Mushrooms AND steamed parsnips for extra veg! Mushrooms are a great source of Vitamin D (which helps our bodies with inflammation, as well as calcium absorption) and parsnips have anthocyanthins ( antioxidants that prevent cell damage). The tomato sauce provides Vitamin C, lycopene, carotenoids, AND extra virgin olive oil is a wonderful source of unsaturated fats ( they healthy kind that helps keep our HDL high and LDL low)! Folate from the dark leafy greens means this meal is just jam packed with vitamins and minerals. Ah, refreshing.
Body:
I often find rest days hard because getting in workouts are a habit, I had to stop myself from putting on my sports gear etc.! I think my body will appreciate the downtime!
Mind:
Microbiology lab is seriously so much fun! I am a little freaked out that we are innoculating everything with e.coli or other bacteria, using burners , etc. but it is a nice change of pace from the normal “read, memorize, repeat” type of normal classwork.
Soul:
I researched a little into puppies today! I am quite eager to have a puppy but quite apprehensive with the allergies!
I was so excited for my “pupils” in metabolism today, I was hoping their exams went well and that I answered their questions thoroughly! Teaching is definitely in my future.
