Polyface Farms

I knew I was heading out for a mid morning run, so I wanted to fuel up properly. I had the ultimate tri-fecta

Steel Cut Oats, Blueberries, and Cottage Cheese…Well and some almond butter too, so is that a quad-fecta? Haha.

Body:
The weather was GORGEOUS!

I had the perfect fuel and it was the perfect day, I had to get out and run while I could right?

8 miles later…I had to get to lunch with Joel! It was such a gorgeous morning though and just a gorgeous day indeed that the 8 miles, and 1 hour 10 minutes flew by!

Mind:
Spent the morning working on EFNEP, adding recipes to lessons. Also, spent the morning focused on my ten pager for Necrotizing Enterocolitis. I turned in the Draft yesterday ( yes I’m posting days behind… ). Tuesday was also my last day at Bonefish Grill! Well, not really. I transferred stores to another location, in hopes of increasing their business and getting paid more on my part! Yippee!

Our campus hosted Joel Salatin of Polyface Farms. Salatin author of You Can Farm and Salad Bar Beef. is an American farmer. He raises livestock using holistic methods of animal husbandry, free of potentially harmful chemicals, on his Polyface Farm in the Shenandoah Valley of Virginia. He has also become a lecturer, speaking on our campus all day Tuesday. The movie Fresh was shown in honor of National Nutrition Month, which I would urge everyone to go see even though I couldn’t attend the viewing (work!). The Master’s program held a special lunch with Joel, just for us!

Spring Salad Mix- Japanese Cucumber, Nature’s Way Farms Onions, Bailey Farms Heirloom Tomatoes

Marinated Grilled Chicken Breast- Citrus Marinated Joyce Farms Free Range Chicken Breast

Rainbow Swiss Chard- Cabernet Sauvignon Braised Certified Organic Rainbow Swiss Chard

Roasted Potatoes and Carrots- Slow Roasted Certified Organic Baby Butter Potatoes and Rainbow Carrots

Poached Pear- Poached Organic Argentinean Bartlett Pear with Indonesian Vanilla Panna Cotta

Every bite was delicious, fresh, and just fantastic.

I had the chance to catch up with several girls in the program here and we seemed to just not be able to stop chatting the whole time! What a great lunch! Hi girls!

So when I finally got home in the evening after work, I made the quickest dinner that I could…Scrambled eggs with lots of veggies (spinach, mushrooms, bell peppers) and had a slice of toast with almond butter.

This didn’t quite fill me up so I had a “dessert” of Apple Pie Yogurt, which has swirls of cinnamon and little chunks of apple inside!

It was really tasty, I know the artificial flavoring and sweeteners are not the best, but it is a good source of Vitamin D and Calcium. Here’s to strong bones !

    Oh I love running on the track! Especially at a high school…it always brings me back :) Wow, 8 miles on a track is a LOT! 32 laps?! You’re such a rockstar.

    Holy Crap that meal looks incredible! I’m dying over those tomatoes because it’s been months since I’ve enjoyed the delicious garden fresh heirlooms!

    Way to go on the eight miles too! Sounds awesome!

    oh man the track reminds me of high school field hockey and lacrosse getting ready for the season. AND college field hockey during prelims. hate that thing haha. youre amazing love and miss uuuuuu wish u were coming to fitbloggin so i could finally meet my sister from another mister! haha LOVE

    that buffet looks so good and healthy. i always get nervous when i go to a buffet because you never know what kinds of food they’ll be serving. heirloom tomatoes are the best!

    i’ve actually never ran on an outdoor track before. whenever i run inside on a track, i always lose count of my laps. i need a garmin! haha.
