Roasted Red Pepper Chipotle Chicken

The tables were literally turned on me last night as I prepared dinner for 4!

Here is the recipe for Being Healthier: Roasted Red Pepper Chipotle Chicken

 

Ingredients:

1 Tablespoon bacon crumbles ( 2 slices cooked bacon)
6 (4-ounce) boneless, skinless chicken breasts
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup Pomegranate Chipotle Sauce (Tastefully Simple)
1 can diced tomatoes with green chiles

1 teaspoon olive oil ( or nonstick spray if you prefer)
1/2 cup chopped onion
3 garlic cloves, minced
1/2 teaspoon ground paprika
1 red-pepper, roasted and sliced
Chopped fresh cilantro (garnish)

Preparation:

Roast the red pepper (can be done in advance or with store-bought roasted peppers) while cooking bacon in skillet until desired crispiness. Remove bacon from skillet, chop and leave aside. Drain excess oil. Add onion, garlic, paprika and olive oil to pan; sauté 2 minutes. Slice the (roasted) pepper and add to pan. Season chicken and add to pan, cooking chicken 3 minutes on each side. Stir in bacon, tomatoes and Pomegranate Chipotle sauce ( could substitute chipotle chiles for sauce). Cover and cook over medium heat 12 minutes or until chicken is done (Internal Temperature reads 165* F for at least 15 seconds). Garnish with cilantro, if desired.

Chicken is an excellent source of lean protein and I’m 100% positive I will always be searching for different chicken recipes! The chicken was the tastiest recipe of the whole meal ( aside from dessert!). I used the last of our Tastefully Simple sauce (which Jeff’s folks had put in our stockings at Christmas) but you could substitute regular chiptole chiles if you like. While I did use 2 slices of bacon, I also made sure to drain the excess oil.

Why drain one oil just to add another? Well, there are many different types of fats and bacon has much more saturated fat than Olive Oil. I wanted to use heart healthy oils but still add smokey flavor by using the bacon crumbles. Turkey bacon would also work but it can be just as high, if not higher, in fat and sodium as pork bacon so check the label! If you don’t want to use either, you could substitute liquid smoke but I personally am not a fan.

    oh wow, dinner looks awesome! so far this weekend i’ve had Subway and Thai takeout. :-o (yeah…apparently i’m on a health kick…) ya know, i’ve never made chicken before in my life! i’m a pescetarian but i do eat chicken occassionally, however, the husband does not so i just never bother.

    That salad looks awesome. What kind of dressing did you use? balsamic? Salads with fruit are the best! Hubby always tells our servers at restaurants he is allergic to salad so he can get soup! So as you know I hardly have salad at home it just goes bad before I get to eat it all myself. Wish I was there for dinner!

    Haha Christal, I wish you were here too! That is too funny that Greg says he is allergic. I struggle with eating the salad greens before they go bad too! I got out the balsamic because that is what I think would go best but I ended up with goddess dressing, which is one of my favs. Jeff put it on b/c he knows I love that dressing but I think balsamic would be the best match.

    Thanks Angela! Sounds like you had a spontaneous weekend- love it! Thai takeout sounds great! I’m on a thai kick recently too- got this killer slow cook recipe from my friend. I’m that way with fish- I love eating it all the time but I don’t like the way I cook it!
