Tastemaker: Happier than a Bird with A French Fry

I am happier than a bird with a french fry because I am a food blogger with a Roasted Garlic and Black Bean Chip!
The Foodbuzz Tastemaker program sent me these awesome samples of new Tostitos brand Artisan recipes tortilla chips (disclaimer) in exchange for writing a post about eating them! I’m okay with that.
The Two Flavors I received on this mission were: Fire Roasted Chipotle and Roasted Black Bean and Garlic….
I decided to share one bag with friends and try something fun with the other bag! My guinea pigs were Nate and Andrea (Andrea’s hubby is Nate). They really enjoyed them, especially with hummus! Andrea was actually sweet enough to cook dinner as well: Beef and Broccoli over Rice
It was excellent – though we found ourselves chatting about using a meat hammer and/or slow cooking the meat to make it more tender- I really enjoyed the recipe she used for the sauce and would love to eat it again exactly the same! I left the Roasted Garlic and Black Bean chips with Andrea but kept one of those bags to myself, with which I made Chipotle Pulled Pork Nachos.

Slow Cooker: Chipotle Pulled Pork
1 oz. Pork Tenderloin ( I used Smithfield Brand Extra Lean)
2 Tbsp Mrs. Dash Chipotle Seasoning
1 tsp Garlic Powder
2 limes, juiced
1.5 cups water

Preparation:
Season tenderloin with chipotle and garlic powder, squeeze juice of 1 lime all over tenderloin and bake at 400* F for 15 minutes. Put tenderloin and any juices that seeped out into the crock pot. Add water and remaining juice from lime AND juiced limes to the slow cooker and cook for 4 hours on low.Topping suggestion for Nachos:
Kidney beans, black beans, tomato, shredded cheese, bell pepper strips, mushrooms, olives, cilantro.

I had these for dinner last night after getting home very late from a three day long work trip. I’ve been in conference sessions that were engaging, enjoyable and entertaining. Don’t get me wrong though, I feel (like another e-word) exhausted!
It’s been awhile since I did a post in this format.Body:
On Monday I ran with a co-worker for her training: 4 mile run at pace (8.5 minute mile pace ) with cruise interval ( 8.25 minute mile pace). Tuesday was a rest day because of traveling.

Wednesday ended up being a 9.5 mile run on the treadmill at the conference hotel! Here is the breakdown:4 miles at my pace (7:00 minute mile), 1/2 mile recovery pace (9.5 minute mile) , 1/2 mile speed ( 6:40 minute mile, which is 9.5 MPH), 1/2 mile recovery, 1/4 mile cruise ( 7:34 minute mile), 1/4 mile recovery, then 1 mile at pace ( 7:00 minute). This 7 miles I ran in 48 minutes! I felt great so I just kept going and finally started to wind down at 9 miles, finishing with 9.5 miles in about 1 hr 15 minutes which is on target for where I would like to be for my next Half Marathon!

Mind:The conference sessions I attended were an overview of The 2010 Dietary Guidelines, History and Future Directions of Education, Learning Styles, and also Savings and Investing.  I cannot wait to write a post on here about the guidelines and other nutrition in the news type of posts!

Soul:
I started meditating for 5 minutes everyday! Call it something other than meditation if you like, but sitting for 5 minutes in silence to focus on just YOU is so worthwhile. I feel so much more centered!
We are making tons of progress on the house remodeling too- I will get together a post soon about that too!What are you doing this weekend?!

    owww- I really want to try the Roasted Black Bean and Garlic chips. Those sound fantastic. And Josh is a huge fan of pork from the slow cooker- I’m actually making some for easter. 9.5 on the treadmill? I’m impressed! My max on the tread is 7 miles…then I get too bored!! I’m hoping to sleep this weekend :)

    I have heard such good things about those chips. I will have to be on the lookout for a bag. I probably shouldn’t be trusted with a bag of yummy chips to myself.

    Happy Weekend! I think that is AWESOME you started meditating for 5 min each day!! I love it. Makes a huge difference for me :) Nachos are soooo good. I love making them at home with real cheese and guac. Can’t wait to hear how the house remodeling is coming along. Have a fantastic weekend!
