Zuchinni Pancakes with a Side of Sad News

I haven’t commented much on my favorite blogs this week but I definitely kept up on my google reader, which is finally up-to-date! I was also sporadic with posting this week for several reasons, travel, being sick, and unfortunately, several dear friends of mine experienced the loss of loved ones in their lives. My friend in college lost her sister in a car accident and another friend lost her mother to cancer- so close to Mother’s Day too. Other colleagues of mine also have found out news of cancer and a death of a father this week.

I didn’t realize how hard I would take all of this but my heart feels like it has been wrenched this week.  I was having a loss of words each night as I seemingly found out something new.

What do you say in the event of someone losing a loved one?

It took me forever to jot down notes because I just couldn’t figure out what to write that could offer comfort of any means. My thoughts are definitely with those this week that are experiencing these difficult moments. I hope they can cherish memories and celebrate life at some point in the future.

Cooking and food is a part of everyones’ lives so back to this food blogging. I made a fantastic breakfast for dinner that I’d love to share because it was quick, easy, healthy and those are things I love especially when feeling under the weather, Zuchinni Pancakes.

Ingredients:
2 large zuchinni squash, shredded and drained
2 eggs
1/2 cup flour ( I substituted oats, ground into flour for added texture and gluten-free)
1/4 cup pecorino romano cheese, grated
1/2 tsp salt, divided
1/2 tsp black pepper
1/3 cup chopped parsley
1 Tbsp Olive Oil, for frying/saute
*additional herbs or seasonings as you like

Preparation:

Shred zuchinni and allow to drain. If you have a cheesecloth, use it to squeeze excess liquid from zuchinni. I squeezed the zuchinni without a cheesecloth (don’t have it). As I squeezed, I realized all the juice that was going down the drain would be perfect for a green monster! So I saved some of the juice for later.
While zuchinni is draining, heat oil in skillet to medium heat. Beat eggs and add all ingredients with zuchinni into a large bowl, mixing batter. Drop batter into hot skillet, cooking on each side for approximately 3-5 minutes.

I served them up with an organic fuji apple and some “fried” eggs, fried in what little olive oil remained in the pan (I’m a stickler for saving dishes to wash and for using as little as I really need).

I actually want to try making them with Raisins as a sweet breakfast pancake as opposed to savory dinner item! Maybe that will be one of my next posts! Upcoming recipe posts will include Granola, The Perfect Chocolate Cake, Strawberry and Feta Salad + Strawberry Day at the Farmer’s Market!
I will have a more regular blog posting next week though we are swamped at work. Travel has slowed down and I have only a few more visits to make! I just found out that a very close friend of mine from college is expecting! Congrats Nikki B.     I find it tricky also re what to say in a sad situation. Knowing you are there for them is most important I guess.

    Frying eggs etc in leftover oil in the same pot…sounds like you are describing how I would cook:) I use up every little bit also and minimise extra dishes – its environmentally friendly and the flavours go into another dish instead of being washed away:) Have a nice weekend.

    So sorry to hear such sad news. I think people never know what to say, but at the same time any words you say will bring some comfort to the person. Just knowing you are there for them.
