I am fortunate enough that my boss has a garden and when she had to bring in all the excess rainbow chard, I was delighted to take a little of it off of her hands! Raw chard is very perishable and PACKED with nutrients like most other leafy greens, thought it belongs to the same species as Beets (roots not leaves).

Chard packs 4g of fiber in 1 cup of chopped chard and only 35 calories. It also has 210% of your daily Vitamin A and is a very good source of Vitamin C, Vitamin E, Vitamin K, Riboflavin, Vitamin B6, Calcium, Iron, Magnesium, Potassium, Copper and Manganese! It couldn’t be easier to make either! No need for fancy recipes though I’m sure they are out there (and surely delicious)! It was so easy to saute this week, several different ways, for a dinner accompaniment. Once with BBQ seasoned (dry rub) chicken and my
favorite quinoa salad..
and again with a Pork tenderloin ( seasoned with peppercorns) and crispy potatoes
(Yes, that is a wine glass in there too! )
(Matched perfectly with roses from the front garden at my house)!
So saute some swiss chard this weekend!
Sauteed Rainbow Chard
Ingredients: ( Makes ~ 4 servings)
- 8-10 stalks Rainbow Chard (you can see in the pot that some stalks were larger than others, the leaves are then in all sizes)
- 2 tablespoons olive oil
- 1 shallot, finely chopped
- 1 garlic clove, minced
- 1 tablespoon Balsamic Vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
Preparation:
Bring oil, shallot, garlic and salt to saute on medium heat. Remember when Emeril always mentioned “Smell-a-Vision”… you smell that kitchen cookin’ whenever you saute oil, garlic and onions! Add the Chard and the Balsamic Vinegar, sauteing for approximately 5-10 minutes. Season to taste!
Lemon Parmesean Chard
Ingredients: ( Makes ~ 4 servings)
- 8-10 stalks Chard, chopped
- 2 tablespoons olive oil
- 2 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/4 cup Parmesean Cheese, grated
Preparation:
Chop chard into bite sizes pieces and bring oil to medium heat. Add chard, lemon juice and seasoning to saute for ~ 10 minutes. Remove and sprinkle with parmesean. Enjoy!
