Starchy Savory Surprise
I cannot stand carrots!

I know, I know, A master of science degree in nutrition, healthy food blogger and I must be munching away on a bag of carrots at my desk every afternoon. Nope, no way! I have always had a disgust for carrots and I do not know why. I thought it was because they are starchy and maybe I am just not a fan of starchiness.
Though tempt me with a hot plate of french fries and I might not steal just one! Starch cannot be my enemy.
Bite of History
The carrots are part of the family of plants called Apiaceae or also known as Umbelliferae ( both names are accepted). That doesn’t mean much but this family tree is GINORMOUS! There are well over 3000 species! The other plants in the family include angelica, anise, caraway, (carrots clearly), celery, coriander/cilantro, cumin, dill, fennel, Queen Anne’s Lace, parsley, and…. the parsnip!
Why I LOVE parsnips and hate carrots is beyond my control but making fabulous recipes with them is not! This recipe was so tasty, light, refreshing and perfect for a summer side dish especially now that grills everywhere are a-goin.
(4 large servings)
Ingredients:
2 large parsnips, sliced
6-8 medium red potatoes, sliced
2 leeks, sliced
1 small green pepper, chopped
1 Tbsp brown mustard (horseradish)
3-4 oz beer
1 Tbsp butter
1/2 cup applesauce
Preparation:
(Grill)
Light grill and heat to high. Place all vegetables into foil packet for grill ( bowl if you want to bake). Add in all ingredients, mixing around gently to coat evenly. Grill for approximately 45 minutes-1 hour. Everyone’s grill is different though so cooking times are estimates. If you bake, heat oven to 425* F for approximately 40-45 minutes.
