Tupelo Honey Cafe and Working Out Wednesday
Work travel resumed this week and this should be the last of the year. Though each trip I say that then another comes up! I had the chance to dine at Tupelo Honey Café for dinner this week and it lives up to the reviews I have been given by friends! We started with their biscuits, which were dense and went perfectly with Tupelo Honey!
I ordered the cornmeal crusted catfish tacos, with julienned swiss chard, fresh Sunshot Farm salsa (cucumber, onion, tomato) and a lemon aioli. I subbed out my fries for sautéed greens and added a side of cheesy cauliflower.
My coworker ordered the veggie burger with goat cheese and sides of brown butter brussel sprouts and fried green tomatoes with fresh basil.
We had plenty of time to decide on exactly what we wanted so that we could share and best utilize our order/taste buds! I have to say that the fresh basil was amazing with the fried tomatoes!
Breakfast was a two-parter. I woke up starving and luckily had a mini bagel with dark chocolate dreams peanut butter. I am newly addicted to chocolate almond butter and peanut butter! The chocolate peanut butters that I have seen are fairly low in sugar ( ~7 g) so really not all that bad for how sweet it tastes!
We stopped at Green Sage, a great place to grab something to go or sit and enjoy coffee. They have tons of vegan, vegetarian, gluten-free options and freshly squeezed juices. I chose the Red Planet (8oz), which was a freshly made blend of carrots, ginger, beets and apples.

It was so fresh and completed out my breakfast for a long day ahead of mountains, travel, program observations and more travel!
Does your city have great options for vegan, vegetarian, gluten free, etc. ?
Mine actually does not and I think that it is so important for restaurants to at least have plenty of options- It brings in more clientele!

I will recap my awesome workout yesterday for Friday’s post but I wanted to recap the week just so I stay consistent!
(6-24)Friday: Rest!
Saturday: Winery tour with my sister!
Sunday: 4.5 mile moderate, hilly run – 43 minutes
Monday: Travel – Long day of driving !
Tuesday: 9.8 Mile Appalachian Trail Run ! It took ~ 2 + hours because it was a ridiculous trail called “Winding Stair”… not a running path but lots of fun with bruises to show!
Wednesday: Pool in the morning and Insanity (Plyo) in the evening
Thursday: Salsa Dancing!
(7/1) Friday: Rest
Saturday : A good friend is coming into town to stay with me so we might go for a run together!
Sunday: Heading to the Beach to see one of my favorite bands play!
What was your favorite workout this week?
I have to say it was being able to check 9.8 miles of the Appalachian Trail off my to-do list!
