Exciting News and Heirloom Tomato Recipe
I was asked to appear on a local TV show on NBC! Some of you that have joined more recently might not know that I’ve been the Raleigh Couples Cooking Examiner for 2 years. I took a break from “examining” with two part time jobs, full time school, blogging here at Being Healthier, and life in general happening! Well, I guess I had caught the eye of someone for couples ideas and cooking so there you have it. I pre-taped the show yesterday! I was a ball of nerves.
The segment will be airing next week sometime. I’m used to being behind the camera, definitely not in front of it! Being in front of the camera is a whole different way of telling your story and as I’m sure millions of others do, I froze up during the interview! It was a humbling experience and I can only hope they cut out those terrible parts!
Part of the reason I love writing so much is that it serves as a flood gate AND a filter. If I don’t like somethings come out of my fingers initially that can be reworded and changed to reflect what I truly mean. I can choose how much or how little to type, but if you are speaking, you can’t press the delete key once you’ve spoken!
I wanted to share one of the recipes I prepared this week in part for that segment! It is the perfect summertime marriage of local and seasonal produce!
Heirloom Summer Salad
- 3 Heirloom tomatoes, diced (variety)
- 1 small peach, diced
- 1/4 cup basil leaves, chiffonade or chop
- 1 small red onion, quartered and thinly sliced
- 1 cup fresh corn kernels (1 ear)
- Salt and pepper to taste
- 1-2 Tbsp Balsamic Vinegar Dressing
2. Chop basil, onion and peach
3. Add all ingredients to tomatoes
4. Toss with dressing
The dressing does add a tangy punch but the spicy basil and red onion are so contrasting to the salted tomatoes and sweet, juicy peach. It was easy as can be, fresh, local, and can be its own star side, topped on chicken, or served as a salsa with chips!
Exciting things going on in the world of Being Healthier! I’m resting and relaxing because that is what weekends are for! I’ve got a trip to the OBX tentatively planned, a trip to DC, a trip to Pittsburgh, and after that a road trip to Florida!
