White BBQ Sauce Grilled Chicken

Hurricane Irene’s undetermined strength and path made most of my plans for this weekend tentative. I learned my lesson with the tornadoes in April to just stay out of nature’s way and inside during natural disasters! The awful radar and predictions for the weekend meant I stayed inside, which meant I made use of my kitchen with a few great new recipes! I will be posting several of those this week and getting ready for Labor Day! Labor Day is always filled with parties, friends, BBQ’s, and summer fun for me so I thought I’d share this grill-friendly recipe.

Lemon Pepper Asparagus and Dry Rubbed Grilled Chicken

 

Dry Rubbed Grilled Chicken

  • 2 boneless, skinless chicken breasts (~8 oz)
  • 1 1/2 teaspoon salt
  • 1 1/2 teaspoon onion powder
  • 1 1/2 teaspoon garlic powder
  • 1 1/2 teaspoon paprika
  • 1/2 teaspoon chipotle chile powder
  • 1/4 teaspoon cayenne pepper

Preparation:
Mix seasonings together ( I used a ziplock baggie).  Tenderize chicken breast with fork and rub mixed seasonings over chicken. Grill for approximately 5 minutes on each side on high heat, move to lower heat area and continue cooking until internal temperature has reached 165* F for at least 15 seconds. Serve with White BBQ Sauce (recipe below).

White BBQ Sauce:

  • 1/2 cup light mayonnaise
  • 1/4 cup white vinegar
  • 1 tablespoon coarsely ground black pepper
  • 1 tablespoon fresh lemon juice
  • Dash of salt

Preparation:
Whisk together all ingredients, adding salt to taste. Serve with Dry-Rubbed Grilled Chicken

This recipe is adapted from the one we tried this weekend on Health.com. I adjusted several of the ingredients and amounts based on our result from our inspiration. The rub is quite spicy so the creamy white BBQ sauce balances that out quite nicely. I would also consider using the white BBQ sauce as a marinade…!

I had a fantastic weekend with loved ones but I’m looking forward to the extra long weekend coming up, especially with two days off work! Thankfully, this weekend we did not even lose power! It was a lot of “hurry up and wait” at the end of last week.

    that looks delicious. Great that you didn’t lose power – so many people did and I feel terrible for them. We lucked out in Manhattan too. Can’t wait for the holiday weekend!

    Nice recipes, seasoning on the rub sounds delicious and the white sauce unique. Glad to hear Irene didn’t cause much problems

    It was unique! Really interesting- I adapted it because it was way too spicy/vinegary to go with the spicy rub. Glad you are okay!!!
