Recipe of the Week: Egg and Bacon Muffin Cups

My co-worker ( Hi Nicole!) made these and showed me them when she brought a few in for lunch, she said it was so quick and simple that I should try it out. I said… Recipe of the Week! With visitors coming to town, I knew it would be the perfect time to try it this weekend!

Ingredients
12 Eggs (or however many you want to make)
12 Bacon slices (or Ham if you prefer)dscn2648_0

Optional:
Scallions
Shredded Cheese
Nonstick spray or butter ( if using turkey bacon or making egg white only, I recommend this)

Preparation:

  1. Preheat oven to 350, prep muffin pan with nonstick or butter
  2. Layer slice of Turkey Bacon in bottom of muffin cup
  3. Crack egg, dropping egg into bacon lined muffin cup
  4. Bake for 17 minutes

I tried some other variations…

I made a few scrambled, I made an “egg white only”, I topped several with cheese. . This is perfect for:

  • Picky Eaters or rather “Individuals”… you can make each one different!
  • Finger-foodie brunches. You can use your hands or small plates
  • Breakfast for Two! This is simple to tailor for 2 people, 12 or however many
  • Easy breakfast-on-the-go. Stuff inside an English muffin or biscuit
  • Freezer-friendly meal helper. Keep some frozen and reheat in the microwave.

    Sounds amazing!  My favorite brunch dish is anything that involves eggs, and I always like to have some type of fruit as well.  So, if I made this I’d serve it with fruit and I’d be set!

    I know right! they are too cute and easy – no mess really either if you use nonstick or something- pop em in the oven and you can spend 15 min doing something else! love it.

    Thanks for the  comment Allison! I just ate them with my hands but my guests used a fork and I’m gonna put one inside an english muffin next time and eat it like a sandwich. Versatility!
